Tradition in Every Cut, Vitality in Every Meal

When our family returned to the States after living in Europe, we were struck by how difficult it was to find truly high-quality, nourishing food. What had once been part of everyday life — hand-cut meats, traditional cures, and beef aged to perfection — felt nearly impossible to access in the industrial food system.


So we set out to change that. What began as a way to feed our own family has grown into a community-focused business rooted in tradition, transparency, and respect for the whole animal. Because we are a custom processing facility, we are not required to use the chemical additives that are permitted in USDA plants. That means the meat we raise and process — the same meat we serve at our own family table — is clean, pure, and crafted with integrity.



On our Colorado farm, we raise Registered Columbia and Registered Finnsheep — not only for their high-quality carcasses, but also for their exceptional fleeces. In addition to lamb shares, we offer raw fleeces for handspinners (available for shipping) as well as beautifully crafted wool products.


Our pork program is equally distinctive. We raise Berkshire and Berkshire cross pigs — prized for their deep flavor and tender texture — making our pork a true culinary delight. And when it comes to beef, we offer grass-fed, grass-finished cattle, dry-aged for 28+ days to achieve unmatched flavor and tenderness.


Every cut is made by hand, every cure follows time-honored methods, and every share reflects our commitment to food that nourishes both body and soul.


We also believe in empowering others to reconnect with their food. Through our butchery and slaughter workshops, families learn how to honor the whole animal and bring every cut into the kitchen with confidence.

Why Custom Processing Matters

Most USDA facilities are permitted — and often required — to use chemical additives during processing. As a custom processing facility, we have the freedom to opt out. That means the meat we raise and process is free from unnecessary chemicals — the same clean, pure food we put on our own family table.
